For the cake you will need:
  • 2 cups all-purpose flour

  • 2/3 cup vegetable oil
  • 1/2 cup unsalted butter, at room temperature
  • 2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk


For the peanut butter filling and frosting you will need:
  • 2 cups creamy peanut butter
  • 1 cup powdered sugar
  • 3/4 cup unsalted butter, at room temperature
  • 1 teaspoon vanilla extract

Instructions

Making the Cake:

Preheat the oven to 350°F (177°C). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper. Set aside.

In a medium bowl, whisk together the flour, baking powder, baking soda, salt and cocoa powder. Set aside.

In a large bowl, beat the oil, butter and sugar until light and fluffy. Add the eggs one at a time and beat until combined. Add the vanilla extract and beat until combined.

Add half of the dry ingredients and beat until combined. Add the buttermilk and beat until combined. Add the remaining dry ingredients and beat until combined and the batter is smooth. Divide the batter between the prepared pans and spread evenly.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes in the pans, then turn out onto a wire rack to cool completely.

Making the Peanut Butter Filling and Frosting:

In a large bowl, beat the peanut butter, powdered sugar, butter and vanilla extract until light and fluffy.

To assemble the cake, place one layer on a cake stand or serving plate. Spread the peanut butter filling over the top of the cake. Place the second layer on top and spread the frosting over the top and sides of the cake.
