  • 3 tablespoons heavy cream
  • 1/2 teaspoon pure vanilla extract


For the syrup:
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 tablespoon dark rum, optional

Instructions

Step 1: Make the Dough



In a small bowl, dissolve the yeast in 1/2 cup warm water. Add the sugar, eggs, oil, lemon zest, and vanilla and mix together. In the bowl of an electric mixer fitted with the paddle attachment, combine 4 3/4 cups flour and the salt. With the mixer on low speed, slowly add the wet ingredients to the dry ingredients. Mix until the dough comes together, about 3 minutes. Switch to the dough hook and knead the dough on medium speed for 8 minutes, adding up to 1/2 cup more flour if necessary to make a soft, smooth dough.

Step 2: Make the Filling and Assemble the Babka



In a small bowl, combine the chocolate chips, butter, brown sugar, cinnamon, cream, and vanilla. Mix until completely combined.

Roll the dough out on a lightly floured surface into a 12-by-18-inch rectangle. Spread the filling evenly over the dough. Starting at the long end, roll the dough up tightly like a jelly roll. Cut the roll in half lengthwise and twist the two pieces together, then place into a greased 9-by-5-inch loaf pan.
