Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup hot brewed coffee
  • 1/2 cup semi-sweet chocolate chips
  • Ganache ingredients:
  • 1/2 cup heavy cream
  • 1/4 cup butter, cut into small cubes
  • 1/2 cup semi-sweet chocolate chips

Instructions

Preheat oven to 350°F. Grease and flour two 9-inch round cake pans. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, salt and cinnamon. In a separate bowl, mix together the oil, buttermilk, eggs and vanilla extract. Add the wet ingredients to the dry ingredients and mix until just combined. Slowly add the hot coffee, mixing until all ingredients are combined. Add the chocolate chips and mix until just combined. Divide the batter between the two prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Allow the cakes to cool for 10 minutes before turning out onto a cooling rack. Allow cakes to cool completely before making the ganache. To make the ganache, place the butter and cream in a medium saucepan and heat over low heat, stirring occasionally, until the butter has melted and the mixture is hot. Remove from heat and add the chocolate chips, stirring until all the chocolate has melted and the ganache is smooth. Allow the ganache to cool for 10 minutes before icing the cake.

To assemble the cake, place one of the cooled cakes on a cake stand or plate. Spread the ganache over the top of the cake, then top with the second cake. Spread remaining ganache over the top and sides of the cake. Serve and enjoy!
