Chocolate Chip Biscotti Recipe
Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup butter, melted
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1/2 cup semi-sweet chocolate chips
Instructions
Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a large bowl, combine the flour, sugar, baking powder, cinnamon, and salt. Whisk together to combine.
In a small bowl, combine the melted butter, eggs, and vanilla extract. Whisk together until smooth.
Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold the ingredients together until a dough forms. Fold in the chocolate chips.
Divide the dough into two equal pieces. Using your hands, form each piece into a log that is about 12 inches long and 2 inches wide. Place the logs on the prepared baking sheet and bake for 25 minutes.
Remove the baking sheet from the oven and let cool for 15 minutes. Reduce the oven temperature to 300°F.
Using a serrated knife, cut each log on the diagonal into slices that are about 1/2-inch thick. Place the biscotti slices back on the baking sheet, cut side up. Bake for an additional 20 minutes, or until the biscotti are lightly golden and slightly crisp.
Remove from the oven and let cool. Serve and enjoy!
