- 1 cup butter, melted
- 1 cup buttermilk
- 4 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup semi-sweet chocolate chips
For the frosting:
- 1 cup evaporated milk
- 1 cup granulated sugar
- 3 large egg yolks
- 1/2 cup butter
- 1 teaspoon vanilla extract
- 1 1/2 cups sweetened flaked coconut
- 1 cup chopped pecans
Instructions
1. Preheat the oven to 350 degrees Fahrenheit. Grease and flour two 9-inch round cake pans.
2. In a medium bowl, whisk together the flour, sugar, baking soda, and salt. Set aside.
3. In a large bowl, whisk together the melted butter, buttermilk, eggs, and vanilla extract. Slowly add the dry ingredients to the wet ingredients, whisking until well combined. Stir in the chocolate chips.
4. Divide the batter evenly between the two prepared pans. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cakes to cool completely before frosting.
5. For the frosting, in a medium saucepan, whisk together the evaporated milk, sugar, egg yolks, butter, and vanilla extract. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 8 minutes. Remove from heat and stir in the coconut and pecans. Allow the frosting to cool to room temperature before spreading onto the cooled cake layers.
6. To assemble the cake, place one cake layer on a serving plate. Spread the cooled frosting evenly over the top. Place the second cake layer on top. Serve and enjoy!
