- 1/2 cup butter, softened
- 3/4 cup unsweetened cocoa powder
- 3 cups powdered sugar
- 1/3 cup heavy cream
- 1 teaspoon vanilla extract
- 1/3 cup Ghirardelli semisweet chocolate chips
Instructions
Preheat oven to 350 degrees F. Grease and flour two 8-inch round cake pans.
In a medium bowl, sift together the flour, baking soda, baking powder, salt, and cocoa powder. Set aside.
In a large bowl, cream together the sugar, butter, and Ghirardelli chocolate chips until light and fluffy. Beat in eggs, one at a time. Add vanilla extract and mix until combined.
Add the flour mixture to the sugar mixture, alternating with the buttermilk and cream. Mix until just combined. Divide the batter evenly between the two prepared cake pans.
Bake for 25 to 30 minutes, or until a cake tester inserted into the center of the cake comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
To make the chocolate buttercream, cream together the butter and cocoa powder in a medium bowl. Slowly add the powdered sugar, alternating with the cream. Beat until light and fluffy. Add the vanilla extract and mix until combined. Stir in the Ghirardelli chocolate chips.
To assemble the cake, place one cake layer on a cake stand or plate. Spread about a cup of the buttercream over the top of the cake. Place the second cake layer on top and spread the remaining buttercream over the top and sides of the cake.
