Chocolate-Cherry Ice Cream Cake

Ingredients:



-2 cups chocolate chips
-1/2 cup butter
-1/2 cup white sugar
-2 eggs

-2 cups fresh or frozen cherries
-2 pints of your favorite ice cream
-Whipped cream for garnish

Instructions:



1. Preheat oven to 350°F and lightly grease a 9x13 inch cake pan.

2. In a medium-sized bowl, melt the chocolate chips and butter in the microwave. Stir until smooth.

3. In a large bowl, beat together the sugar, eggs, and vanilla extract until light and fluffy.

4. Add the melted chocolate mixture to the egg mixture and mix well.

5. In a separate bowl, combine the flour, salt, and baking powder. Slowly add this to the chocolate mixture, stirring until just combined.

6. Pour the batter into the prepared pan. Top with the cherries, pressing them lightly into the batter.

7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

8. Allow the cake to cool for 10 minutes before turning out onto a plate.

9. Place the cake in the freezer for 15 minutes, then remove and spread one pint of ice cream over the top. Place back in the freezer for 1 hour.

10. Carefully remove the cake from the freezer and spread the second pint of ice cream on top. Place back in the freezer for at least 3 hours before serving.

11. When ready to serve, garnish with whipped cream, if desired. Enjoy!
